Favorite Pen
I have had lots of favorite pens in my life. Currently my favorite is my dollar store pen. It is just the right size so that I don't get hand cramp when I right with it. It is blue ink and has a yellow highlighter on top. It twists open so there is no cap to mess with (except for over the highlighter). I love my dollar store pen!

Favorite Laundry Detergent
I love All liquid laundry detergent - the original scent formerly known as Surf. It just smells so fresh and clean. I love putting clothes in the dryer after they have been washed in it. I have been washing all of our clothes in All Free & Clear ever since Cole was born and have reserved yummy smelling detergent for just our sheets and towels because when I was little I was very sensitive to laundry detergent and my mom had to wash all my stuff in Purex so I am trying to avoid yucky skin stuff with my children. Anyway, I decided that today was the day to at least wash mine and Matt's clothes in yummy smelling laundry detergent again. Call me crazy, but it smells GOOD!!!!
Also, All has there 3x concentrated version of detergent that is bottled in smaller plastic bottles with the same great smelling cleaning punch! Check out their website for how it helps the environment!

Favorite Elementary School Teacher
I went to 5 different Elementary Schools in 3 different states in 6 years. I don't even remember most of my teachers' names. But for the first half of 3rd grade my teacher was Mrs. Guy. I don't remember a whole lot about her, but she is the one who taught me that peanut butter is really good on apples! She was also very kind. I remember that she was probably in her 50s when she taught my class and she was taking piano lessons. I thought that was really neat. She even participated in a recital. I don't remember much about my school lessons from her, but I do remember the simple way she taught life lessons.

Favorite Candy That has Chocolate In It
I love Reese's peanut butter cups! I especially like the holiday versions (Easter eggs, Christmas trees, etc.) because they have extra peanut butter. I LOVE peanut butter!! I also like the white chocolate and dark chocolate varieties. I don't care so much for the kinds that have all the extra stuff - crispy wafer, crunchy peanut butter, etc. - I like plain old creamy peanut butter covered in chocolate!! YUMMMMMM.....

Favorite Vacation Spot
My favorite vacation spot is Hawaii!!! Matt & I went to Oahu on our honeymoon. It was my first (and only so far) time to go there. It was absolutely beautiful. Here are some pictures from our trip. (I was anti digital camera at the time, so I don't have very many pictures in digital format. These don't do justice to how beautiful it was.)

That fresh pineapple was yummy for breakfast every morning. If there was one thing I could take from our honeymoon and have everyday for the rest of my life it would be the breakfasts. The view, the buffet, the Kona coffee, and the yummy pineapple - and I didn't have to clean it up!!

Diamond Head - Our view from breakfast every morning. We climbed it one day. It was a difficult climb, but the view from up there was breathtaking.

Favorite Flower
I couldn't pick between two types of daisies, so my favorite flower is the daisy. Of the daisy family my two favorites are gerber daisy and shasta daisy. When Matt and I were dating I came home one day and found potted gerber daisies on my front porch. I wish I could say that the flowers lasted a long time, but my green thumb is injured. The memory of him doing something for me that he knew I would love, will always last.

Favorite thing about my mom...
So it is currently Thursday, 5/17/07, and I am finally doing last week's Favorite Friday topic. I was traveling halfway across the country and back with a toddler and infant, that is my excuse for being late....

In honor of Mother's Day, my favorite thing about my mother is that she is MY MOMMY! She knows me, she listens to me, she is exhaustingly honest, she is dependable, she is optimistic, she loves my daddy, she loves my husband & our children, she is "Gram-gram", she is silly, she smiles when she is half-asleep, she puts up with being teased, she is a caregiver, she is a great cook and helps me with recipes all the time, she made ALL of my birthday cakes and decorated them herself, she is teaching me how to be a mommy, she still lets me cry on her shoulder, she crinkles her nose up when she laughs (just like me!), she gets rectangle mouth when she cries (just like me!), she beams a Christ like spirit, she is my mommy.....I could go on and on about all the things I love about her, but I love her most for her just being her! There is no one else like her!

Favorite Friday - Favorite Professional Sports Team
To be completely honest, professional sports is not my favorite thing. I much prefer college sports. But when it comes to professional sports, I really only pay attention to the NFL. This is mainly because I play in a fantasy football league and Matt LOVES pro football. So I will have to go with the TN Titans. I guess I started following them because of them being the local team and my high school mascot was the Titans so it felt natural to cheer for the Titans. Hopefully this season will be a good one, and there won't be any problems on or off the field!!

Favorite Church Potluck Casserole
MMMMMMM....Yummy! Chicken Rotel is my favorite church potluck casserole! My mom used to make it for almost every potluck we had a church (or at least that is how I remember it) along with her FAMOUS chocalate pies! Lucky for me, she made it for me last time she was here. Here is the recipe:
4-5 Chicken Breasts (with the bone & the skin!)
1 Diced Onion
1 Diced Bell Pepper
1 Stick Butter
8 oz Vermicelli
1 lb. Velveeta
2 Tbsp Worcestershire Sauce
1 can Rotel
1 can drained LeSeur peas
Boil chicken breasts until fully cooked. Remove chicken breasts from broth. Set aside to cool a little before removing bones & skin. When cooled shred chicken. Melt butter in skillet and saute onion and bell pepper in butter. Cook vermicelli in chicken broth until most of water has boiled off. Put onion & pepper in vermicelli/broth. Add velveeta, worcestershire sauce, and rotel then stir over low heat until cheese melts. Stir in LeSeur peas and shredded chicken. Pour into 13x9 casserole dish (2-2 1/2 qt). Bake at 350 degrees for 30-45 min (until bubbly).
The great thing about this recipe is that you can mix it up before you need it, and then just pop it in the oven when you are ready. It will take a little longer in the oven after being refrigerated of course! I might have to make this soon!!!
